Working out at .17 cent per cake this is a family winner. I’m not going to lie that depends on the level of spices. This recipe is going to make 6 cakes or more depending on the size of them. As your going to see with all of recipes it is up to you how you choose to adapt them to suit your own preference. I personally thought the cayenne was going to put my babies off but no they ate the last three without taking a breather.
I would say this recipe is totally healthy you could omit the flour but I choose to have it in as I find the outside gets that nice little crispy coating and lets face I’m down for the crispy.
3 small sweet potatoes
1 tin of tuna drained
1/2 cup of breadcrumbs
4 spring onions sliced
2 tablespoon flour
1/2 cup of frozen peas
1 teaspoon of Salt
1/2 teaspoon ground coriander or teaspoon of chopped fresh coriander
1 teaspoon of paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon frozen peas
1 teaspoon of grounded black pepper
2 cloves of garlic crushed
1 tablespoon coconut oil
1 egg whisked
First thing is to keep the skin on and slice your sweet potatoes and boil for 12 mins in salted water.
Add your sliced onion, garlic into a large bowl.
Place your peas into a microwaveable dish with a bit of water and microwave for 3 mins until soft. You could also add them to a pot and cook until soft. Either way remove and allow to cool.
I’m going to add in my salt pepper, spices and drained tuna to the bowl. Make sure you break up the tuna.
Peel your cooled potatoes and mash them up.
Add them to the bowl, along with the breadcrumbs peas and eggs
Mix them all up and make them into pattie shape.
Add the coconut oil to a hot pan and turn the heat to medium.
Dip your patties into a plate with your flour and add straight to the pan.
Fry for 3 minutes on one side and 2 mins on the other.
And that’s it . I dare you to wait until this is cool before you have a taste lol.
