Ingredients

  • 250g Pork belly

  • 200g egg noodles
    1 small bok Choy roughly chops
    1 quarter of the head of broccoli
    1 carrot julienne
    4 scallion chopped in 10 cm length
    5 mushroom sliced
    1 thumb of ginger chopped as finely as you can
    5 cloves of garlic chopped finely also
    1-star anise
    3 cloves
    5 black peppercorns
    1 small stick of cinnamon
    1.5 litre of hot water
    1 tablespoon of sunflower oil

    Sauce
    1.5 tablespoons of soy sauce
    1 tablespoon of oyster sauce
    1.5 tablespoons of honey
    then we add the garlic and ginger and mix
    2 tablespoons of hot water



Directions

  • Add your pork belly to a pan with star anise, cloves, cinnamon and black pepper. Bring to the boil then simmer for 40 minutes.
  • Cook the noodles and allow them to cool. I don’t like them to be soggy so I always spread noodles out on a plate.
  • Chop all of the fresh vegetables and place them in a dish.
  • Place garlic and ginger in a bowl and add water, soy sauce, oyster sauce and honey to this dish. Taste and adjust if needed
  • Remove the pork from the water and allow it to cool and slice thinly.
  • Heat your wok until it just starts to smoke and add the oil.
  • Add the pork and fry until its dee golden. Remove from the pan and set aside. If there is excess oil drain half
  • Add the vegetables and stir fry on high heat. Remove and set aside.
  • Add the noodles to the wok along with the rest of the oil. Make sure the wok is really hot. Stir fry for 1 minute.
  • Add the pork back to the wok with the pork and stir fry for 30 seconds.
  • Add the vegetables and stir fry for 30 seconds.
  • Pour the sauce in and make sure it is well stirred in and heated through.
  • Remove and eat.
