This is a personal favourite of mine because it’s the ultimate side dish/ Party food its clean and healthy. I make it atleast once a week. There is no waste because I use the skin and everything and why not. Most of the nutrients are in the skin. And if you want to impress on a budget this is the dish. Party season is coming and this could make a inexpensive dish. For 4 people it works out at  70 cent each….crazy right!  The image you see here is a family dinner  I made. Makes 8 Patties


450g sweet potatoes

1 onion diced

1 chilli pepper diced

Salt and pepper

2 crushed garlic clove

1 teaspoon of olive oil



Preheat the oven at 180 degrees.

Grate the sweet potatoes skin on . Using a muslin cloth squeeze the juice out of the potato. Add the sweet potato to a large  bowl.

In a large frying pan.  Heat oil, then add chilli, onion and saute for 5 minutes on a medium heat.

Add the sweet potato to the pan and gently cook for 10 minutes.

Season with salt and pepper. Remove from heat and leave to cool.

Add an egg and mix. With your hands gently pat the mixture into 8 patties. Place onto a lined baking tray.

I like mine crisp, so I spray the sheet with spray oil before placing patties on it.

Bake for  20 mins turning half way through.
