imageIf I’m honest baking is not my thing. Being someone that cooks with the nutty professor mentality of think it, cook it, taste it, adjust it and serve. Baking can be a limitation for me. However when I bake something and it comes out right I’m in heaven and although this is not the secret recipe for my mam’s banana bread, this is one I came across and I’m proud to say it delivers every time with minimum effort. And its perfect way of using your over ripe bananas

Serves 6 or 1 depending ha ha




3 very ripe bananas

1 1/2 cups of flour

1/3 cup of melted butter

1 egg lightly  whisked

1 teaspoon of baking soda

1 teaspoon of vanilla extract

3/4 cups of maple syrup or sugar

pinch of salt

1/4 teaspoon  of cinnamon (optional)

Note: You can go to town on this one, by adding a handful of nuts, chocolate chips or all if you want this recipe is fool proof.


Preheat your oven to 350 F (175 C) and butter a 4 X6  inch loaf tin.

In your mixing bowl, mash the bananas with a fork until smooth. Then to  this stir in the melted butter.

Mix in the baking soda cinnamon and salt. Stir in the maple syrup (or sugar), beaten eggs and vanilla extract. Mix in the flour.

Pour the mixture into you prepare loaf tin and bake for 55 mins to and 1 hour 5 , or until tester inserted into the mix comes out clean.

Remove form the oven  and cool completely on a rack. Remove the  banana bread form the pan. Slice and serve with bread knife preferably.
